Chloe’s Chocolate Chip Cookies

Delicious chocolate chip cookies made with the addition of cream cheese, which makes them perfectly soft and tender.

With the title “Chloe’s Chocolate Chip Cookies,” it probably goes without saying that this isn’t one of my grandma’s recipes; it is one of my sister’s. My grandma loved these cookies, though. In fact, looking through her cookbooks after she passed, I found this recipe written down four different times. From what Chloe told me, my grandma kept misplacing it, so she would ask for it again and write it down. Turns out, she put them in her cookbook, the one that doubled as a filing cabinet for all of her recipes that were hand-written, cut out of magazines and newspapers, or saved from ingredient packaging. If you could see the cookbook, you would understand why she couldn’t find the cookie recipe. It may seem like a mess of papers to some, but there is such wealth tucked into the pages of that book. Every time I search through it, I see glimpses of my grandma and sometimes I find new pieces of her that I had not noticed before.

One thing I’ve come across is how she had several recipes labeled with the name of the person who gave it to her. There were more like this one with so-and-so’s dessert, but others that were sent to her in letters from her sister or given to her by friends from church. This says to me that while she loved trying out those recipes, what mattered more was the person who shared it. She also didn’t hesitate to write down and share any of her own recipes if someone asked for them. I think, in part, that sharing recipes that way was just part of what people did in her time. I mean, they couldn’t just Google “Chocolate Chip Cookies” and get a multitude of different recipes to try. However, I also remember times I would be at her house and she’d say “Come over here and let me show you how to make this,” or times she’d excitedly hand me a magazine opened to a recipe she found and ask, “Doesn’t that sound wonderful?” Sharing and saving recipes was about connecting with people, but it was also about doing something she loved to do. So, when I look through that cookbook, I see the connections, and I see her smiling face asking me to read that magazine page or try something new that she made. As I have begun sharing the recipes she enjoyed, ones found tucked into the pages of that cookbook, I like to think she would be smiling her proud grandma smile, excited for me to do the sharing, make the connections, and try the new recipes.

Ingredients

  • Brown Sugar
  • White Sugar
  • Butter
  • Cream Cheese
  • Egg
  • Vanilla
  • All-Purpose Flour
  • Baking Soda
  • Cornstarch
  • Salt
  • Semi-Sweet Chocolate Chips – the recipe actually calls for bittersweet chips and semi-sweet chips, but I typically just use semi-sweet because I already have those on hand.

Special Equipment

  • Large Cookie Scoop – the recipe my grandma wrote down says to measure 1/4 cup of dough for each cookie, but I prefer a large cookie scoop. Whatever is closest to 1/4 cup works just fine.
  • Cookie Sheet
  • Cooling Rack

How to Make Chloe’s Chocolate Chip Cookies

  • Step 1: Preheat your oven to 350° and prepare a cookie sheet with parchment paper.
    • The parchment isn’t necessary if you prefer not to use it. I just always do because clean up is easier.
  • Step 2: In a mixing bowl, cream together 1/2 cup (1 stick) of butter, 1/2 cup (2 oz) of cream cheese, 1/4 cup white sugar, and 3/4 cup brown sugar.
  • Step 3: Add in 1 egg and 2 tsp of vanilla.
  • Step 4: In a separate bowl, mix your dry ingredients – 2 and 1/4 cups of flour, 1 tsp baking soda, 2 tsp corn starch, and 1/4 tsp of salt.
  • Step 5: Add your dry mixture to the creamed mixture.
    • I like to do this by scooping in 1/4-1/2 cup at a time, letting the dry mixture combine some before adding the next scoop. Mostly, it keeps the dry ingredients from being scattered everywhere by my mixer, but it also helps everything get fully mixed together.
  • Step 6: Gently stir in 1/2 cup of bittersweet chocolate chips and 1 cup of semi-sweet chocolate chips. If you prefer, you can just do 1-1/2 cups of semi-sweet.
  • Step 7: Measure out 1/4 cup scoops of dough and place them on the cookie sheet. You could also use a large cookie scoop if you have one.
  • Step 8: Bake cookies for 14 minutes. Once done, let them cool for a few minutes, and then transfer them to a wire rack to cool completely. Enjoy!

  • 1 cup semi-sweet chocolate chips

Directions

  • Add your dry mixture to the creamed mixture.
