Everything I Baked in May 2026

Just like I did for April, this is a recap of everything I baked in this past month, both for posting on the blog and for my own personal baking. If there is anything I share here that doesn’t already have a recipe posted, leave me a comment and I’ll make sure you get that recipe.

1. Chloe’s Chit-Themed Birthday Cake

Please excuse the messy countertop 🙃 As the heading implies, I made this cake for my sister’s birthday. She asked for something that would make her laugh, so I surprised her with a Chit-themed cake. If you don’t know who Chit is, look him up on TikTok. The flavor for this was red velvet with cream cheese frosting and it was so moist and delicious. I’m still working on my cake decorating skills and I was a little short on time for frosting it, but I was happy with how it turned out. She loved it, and that’s really what mattered the most to me!

2. Lemon Meringue Pie

I made this pie as one of my regular posts (find it here) and it was so delicious. It was light and not overly sweet, so it was definitely a more refreshing type of dessert. The meringue on this was also made differently than other meringues I’ve made as it used corn starch instead of cream of tartar. I think I like the cream of tartar better, but it’s good to know cornstarch works in case that’s all I have on hand.

3. Chocolate Chip Cookies

My husband asked me to make something that he could take to work for a lunch they were doing with his department. I didn’t have time to do anything fancy (I can be pretty extra when afforded the time), so I told him chocolate chip cookies would have to do. He said that everyone thought they were really good, so that’s a win in my book.

4. Stuffed Chocolate Chip Cookies

I made these at the same time I made the cookies for Tyler to take to work, but am counting them as separate because they are different and I made them for home. When I made my sister’s cake, I had leftover cream cheese frosting, so I piped dollops of it onto parchment paper and froze them. Then, I wrapped the cookie dough around the frozen frosting and baked them to create something like a cheese cake stuffed chocolate chip cookie. They were delicious!

5. Banana Pudding

Another regularly scheduled post, but still a wonderful dessert. Find the recipe here. I knew I was posting this recipe, but I timed making it for the blog to coincide with Mother’s Day. My family came over for lunch, so of course I had to provide a dessert. This one is such a nostalgic treat, but I did make it a little differently this time. Instead of using instant vanilla pudding and cool whip, I decided to make my vanilla pudding and whipped cream from scratch. It turned out great!

6. Cinnamon Coffee Cake

Sadly, I do not have a picture of this one, but I still wanted to include it in my list. Baking mishaps happen to the best of us, and with this cake I ran into the issue of it sticking to the inside of the bundt pan. I made it to take to Bible study, so instead of taking it as a whole cake, I cut it up into servings. It worked out just fine and was still just as delicious. My mom always says the taste is what matters when it comes to baked goods, and that was definitely true in this case!

7. Tyler’s Birthday Cake

We celebrated my husband’s birthday this month, and I was so proud of this cake! I baked a chocolate cake and made a cookies and cream buttercream frosting to go with it. The cake was moist and delicious, as always (that recipe is a go-to), and the frosting turned out amazing. I was struggling a little bit with piping it due to the bits of cookie stopping up the piping tip, but I changed to a larger tip and was able to do what I needed. I feel like my frosting/piping skills are improving, too!

8. Old-Fashioned Cream Cheese Pound Cake

I forgot how absolutely divine this recipe is. My mom makes this pound cake to take to an annual family reunion we have Memorial Day weekend, and I decided to make it for a post (recipe here). The cake is very dense, but still perfectly moist. It’s so good! It’s not shown in this image, but we always serve it with fresh strawberries and whipped cream.

9. Strawberries and Cream Cookies

I’ll be honest – these were a flop. I wanted to see if adding blended freeze dried strawberry powder to sugar cookie dough would create a strawberry cookie, and it just didn’t work. You can see the full recipe and review here if you’re interested. Maybe you can tell me how to fix it!

10. Cherry Pie

I made this pie to take to dinner at my brother’s house, and I used the recipe my grandma noted was the best. I had a couple mishaps with this one – first with the cherries I bought, then with the crust – but was able to pivot some and wound up with a kind of ugly yet delicious pie. I do plan on posting this recipe sometime this summer, so stay tuned for that! Hopefully, I have less issues with that one 🙃

11. Sandwich Bread

I normally make boule loaves when I bake bread, but sandwich bread was my last recipe post for May with the memory of my grandpa always having buttered bread with dinner. This is a great bread recipe, and really easy to do because it uses a stand mixer for the mixing and kneading. Find it here. In the past couple days, I have cut slices of it to use for making homemade garlic toast, and it is so good!

12. Buttermilk Biscuits

Since my husband was off for Memorial Day, I wanted to make a special breakfast of sausage gravy and biscuits. I used the same biscuit recipe I have posted on the blog – this one – but modified it slightly to make them with buttermilk (those instructions are in the post). These biscuits are so easy to make, and with the gravy – so good! I also had a biscuit with some homemade strawberry jam. I mean, how could I not?

13. Confetti Cookies (Sugar Cookies w/ Sprinkles)

If you read all of my posts, you may recognize this picture from my April baking recap. I made these cookies again this month to take to Bible study, but in the rush to try to get there on time, I forgot to take a picture. I figured I would reuse this one so you could at least see what I made. I did do the ones for Bible study a little bigger than these, though. We didn’t have any leftover to bring home, so you know they were good!
