Golden and crisp on the outside, fluffy and tender on the inside, these waffles are perfect for enjoying together on a late Saturday morning.

My grandparents’ house was a place to gather, and we gathered there frequently. A lot of my family lived close by, and it seemed that there was always somebody stopping in for a visit. Then, more people would stop because they saw that others were there, and before we knew it we’d have a small, impromptu family gathering. Sometimes, though, the gathering would be planned, and one that happened every so often was for waffles. It was pretty simple. My cousins would pick a Saturday to get together in the morning at my grandparents’ house, and Grandma would make us waffles. We would eat and spend the time visiting with one another. The couple times I can remember this happening, I was pretty young, maybe elementary school age, so my cousins probably remember it a little better than I do. Even though I was younger, I enjoyed those get togethers very much. It made me feel special to be included. Of course, the waffles my grandma made were great, but thinking about it more, the get together wasn’t really about the waffles. It was about being able to gather with people we love; the waffles were just a delicious bonus. I hope you can enjoy these waffles with people you love, too.

Ingredients

  • All-purpose flour
  • Sugar
  • Baking powder
  • Salt
  • Eggs – these will be separated into the whites and yolks
  • Milk
  • Vegetable oil

Special Equipment

  • Waffle Maker – You probably didn’t need me to tell you that you need a waffle maker in order to make waffles. If you don’t have one, though, I use one similar to this Cuisinart Belgian Waffle Maker. You could also do individual, Eggo-sized ones with a Dash Mini.
  • Mixer (optional) – For this recipe, you have to beat the egg white before folding them into the batter. Having a stand mixer or electric hand mixer will help with that. If you are using a stand mixer, make sure you use the whisk attachment.

How to Make Waffles

This recipe makes 12 to 13 square waffles.

  • Preheat your waffle maker to your desired temperature setting. I set mine right in the middle for a medium darkness.
  • In a mixing bowl, combine 2 and 1/2 cups of flour, 4 tbsps of sugar, 2 tsps of baking powder, and 1/2 tsp of salt.
  • In a separate bowl, mix together 3 egg yolks, 2 cups of milk, and 1/2 cup of vegetable oil.
  • Add the dry ingredients to the wet ingredients and mix well. I like to add a little bit at a time and mix so that it’s easier to get it all incorporated. The batter will be thick, and it’s okay if it’s a little lumpy.
  • Next, beat 3 egg whites until stiff. I recommend using a stand or electric hand mixer for this part, as it will be much easier. It took about 2 minutes on high using my stand mixer.
  • Fold the egg whites into the batter using a spatula. Keep folding until the egg whites are fully combined.
  • Spray your waffle maker with oil and add batter. Let the waffles cook to your liking. Mine took about 4-5 minutes.
  • Add whatever toppings you like on your waffles and enjoy!

Questions You May Have

Can I put inclusions in my waffles?

Absolutely! You can add things like chocolate chips, blueberries, nuts, sprinkles, or anything else that might make them extra tasty.

How can I store my waffles? And, how long?

I put my extra waffles in a freezer bag and keep them in the freezer. Then, I put them in the toaster to heat them up. You can also store them in a sealed container or baggie in the fridge if you will use them faster. They’ll keep 5-7 days in the fridge, or up to 2 months in the freezer.

Can I store the batter if I do not use it all?

It should be fine to store the batter in the fridge in an airtight container for a few days. However, I don’t know how that will impact the quality of the waffles. If you know you will not use all of the batter, you can always half the recipe. Or, make all of the waffles and store the leftovers.

Can these waffles be made gluten free?

To make these gluten free, you would just need to swap out the flour for a gluten free measure for measure flour. I have not made them this way, so I don’t know how it will impact the rise, texture, cook time, etc. Do NOT use something like almond flour as a substitute, though, as it does not work the same as an all-purpose flour does.
