Everything I Baked in July 2026

I’m a touch late posting, but this is a review of everything I baked (or no-bake sweet treats I made) in the month of July, whether for posting recipes or personal baking. I anticipated baking a little bit more in July, but there were a couple things I had planned that I didn’t wind up making. In addition to my blog bakes, I made some things to take with us for road trip and camping snacks on vacation. 1. Strawberry Ice Cream (it’s actually frozen custard)

I have made ice cream a few different times, and I love trying new flavors. This strawberry flavor turned out really good, and was a fantastic frozen treat. I used a custard base and added a strawberry reduction to it for the flavor. The recipe is posted here if you’re interested.

2. Dinner Rolls

I made these dinner rolls to go along with some pork and beans that I made from a leftover pork bone, and they were spectacular. They were soft and buttery, just like rolls should be, and they were fairly easy to make. I don’t make rolls often, but should definitely start baking them more.

3. Pineapple Upside Down Cake

I love pineapple upside down cake. The cake is moist and buttery, while the pineapple and brown sugar bring a balanced sweetness to it. They also look really fancy, but are surprisingly easy to make. I definitely enjoyed making this for the blog, and getting to have it for dessert in the days after. The recipe is posted here.

4. S’mores Pudding Dessert

This pudding, while a little messy, was so delicious. I love anything s’mores, so I knew I would enjoy this, but I was surprised by how balanced it was. Many times, s’mores desserts are too heavy on the chocolate, which buries the other flavors. With this, I felt like I was able to enjoy the combination of the flavors while also tasting each of them individually. It was like Remy with the the strawberry and cheese, only with a s’mores pudding. The recipe can be found here.

5. Cookies & Cream Cookies

These cookies were part of the cookie jar series. They tasted good, but were a little lacking in flavor. I used a chocolate chip cookie recipe, left out the chocolate chips, and added crushed up Oreo cookies. It just needed something more. You can read the full recipe and review here.

6. Energy Bites

These are not a baked item, but they are a little treat I made to take on our trip. They are packed with lots of nutrient-filled ingredients, like hemp hearts, chia seeds, honey, and walnuts, along with some tasty peanut butter and chocolate chips. They are a great grab and go kind of snack.

7. Banana Mini Muffins

These are another little snack I made for our trip. I substituted pure maple syrup for the sugar, but other than that they are just regular banana muffins made in a mini muffin pan. Our 9 month old really liked these, so I think they may become a new go-to when I have bananas that are aging into their baked good era.

8. Rice Krispie Treats

I forgot to take a picture of them, but I also made some Rice Krispie Treats for the trip. I already had what I needed, so it was a way to also get through some ingredients that needed to be used. I didn’t actually have enough of the rice cereal, though, so I crushed up a cinnamon toast cereal and added that in. They turned out pretty good and the cinnamon cereal gave the treats a fun extra flavor.

That is it for the month. Like, I said, there were a couple things I planned to make, but didn’t get around to them. It was still a pretty packed month, though. If I had to pick a favorite thing from July, it would definitely be the s’mores pudding. Now, August is starting strong with some peach pie, and I’ve got lots more delicious items planned!
